Vasse Felix was the first commercial vineyard and winery to be established in the Margaret River region of Western Australia.

INTRODUCTION
This wine is made in the traditional ?Methode Champenoise? style, using Pinot Noir, Pinot Meunier and Chardonnay.
The base wine is blended each year according to vintage conditions and fruit quality. Reserve stock (up to 30%) may be blended back to the base wine to achieve complexity, consistency and house style. The reserve stock is a solera system blend that includes reserve wine from previous vintages. This blending system is the essence of producing a non-vintage style sparkling wine. The blended base wine completes secondary fermentation in the bottle to produce the desired pressure and carbonation.
After secondary fermentation the wine is aged on yeast lees for approximately 2 years, promoting yeast autolysis,a natural breakdown of yeast cells, imparting an extra creamy dimension and texture to the wine. This process is the hallmark of quality sparkling wine, adding further complexity and balancing racy acidity. Following riddling and disgorgement, the wine offers bready, doughy, yeast extract aromas. Following disgorgement (removal of yeast lees), dosage liqueur is added to the wine at 5g/L, promoting extra richness to the palate while retaining a nice dry, clean finish to the wine.

WINEMAKERS COMMENTS
The colour of this wine is often described as ?eye of partridge? and refers to its salmon pink tints. The mousse is fine and persistent due to its Methode Champenoise heritage and lees aging.
The nose offers aromas of sourdough, mushrooms, quince, poached pears and yeast extract. Aromas of cold meats and toast are typical of aged Pinot Noir components in the wine. The Pinot Noir also adds richness and palate weight, Pinot Meunier provides fresh, uplifted and perfumed aromas, and Chardonnay provides the acid structure and length. Concentrated yeast extract and nougat characters provide extra complexity to the nose.
A fine, delicate clean wine with firm acid structure and intensity. The dry, chalky, mineral edges on the palate are balanced by subtle creamy textures and dosage liqueur. The Silver Knight NV Extra Brut is an excellent aperitif style Australian sparkling wine. Best consumed when freshly disgorged, however the wine will develop extra richness and complexity with short-term cellaring.
